Tomato pudhina(mentha) is a south Indian rice variety.It is comparatively easy to prepare and delicious.It blends the unique taste of garlic into a salty base .Tomato is rich in protiens and pudina has great digestional  benefits.Tomato pudina rice can be consumed as such  or taken along with a side dish.



Ingredient of pudina rice


Raw rice 1 cup
salt to taste
pudhina 1 cup
coriander ½ cup
green chilli 4-5
ginger a small piece
garlic 5-6 cloves
turmeric powder ¼ tsp
tomato 3
oil 2 tsp
ghee 1 tsp
cinnamon a piece



Preparation of pudina rice



1. Cook the rice by adding salt as non sticky
2. Grind cleaned pudhina, coriander, green chilli, ginger, garlic and turmeric powder to a fine paste
3. Grind tomatoes to a fine paste
4. Heat oil in a pan add cinnamon and saute
5. Add the grinded paste and saute till the raw smell goes off
6. Add the tomato juice and salt and cook till the water drains out
7. Add the cooked rice and mix well and serve
