Ingredients for Sea shallots in Butter sauce

Schallops 250 gm
Water ¼ cup
Bay leaf 1
Pepper corns 2
Butter 1 tsp
Shallots chopped 3
Flour 1 tsp
Salt to taste
Cayer pepper ¼ tsp
Lemon juice 1 tsp
Fresh cream 1 tsp

How to Prepare Scallops and white butter sauce

1. Rinse scallops and place in a saucepan. Add wine water, bayleaf and pepper corns
2. Bring to boil and reduce to a gentle simmer for five mins or until scallops are just tender
3. Drain the scallops and retain the liquor. Remove bay leaf and pepper corn from the liquor
4. Melt butter and fry shallots until soft. Remove sauce pan from beat and blend in the flour
5. Gradually add the liquor. Return to the heat and bring to the boil. Add salt, cayenne pepper, lemon juice and scallops and sim gently for two mins. Stir in cream
6. Use 2 tsp of mixture as for each toasted sandwich
