Kathirikai kulambu | Spicy Brinjal Curry Recipe

 

kathirikai Kulambu is as obvious from the name belongs to the south Indian cuisine(Tamil Nadu curry).Here the brinjal is fried in oil and boiled in gravy.kathirikai Kulambu is spicy and hot and can be prepared in a short notice.Brinjal curry is popular across the south india and is known as Vankaya Masala kulambu in Andhra.

 

 

Ingredients for Brinjal Kootu Curry

 

 

1. Brinjal 3

2. Tamarind lemon size

3. Salt to taste

4. Turmeric powder ¼ tsp

5. Asafoetida ¼ tsp

6. Oil 2 tsp

7. Mustard ¼ tsp

8. Dhall 1 tsp

9. Curry leaves few

10. Red chilli 2

11. Green chilli 2

 

Kathirikai kulambu Curry in 4 Simple Steps

 

1. Wash and wipe and grease the brinjals with oil and saute in a pan and cook on all sides
2. Allow it to cool, peel the skin and smash
3. Thickly squeeze the tamarind, add salt and turmeric powder and boil it
4. Add the smashed brinjals to the boiling gravy
5. Saute the other ingredients in oil till brown and add to the gravy and mix well and serve
