French beans 1 cup, Onion 1, Pepper 10-15, Garlic 2-3 cloves, Red chilli powder 1 tsp, Jeera ¼ tsp, Oil 1-2 tsp, Mustard ½ tsp, Salt to taste, Split urad dhall ¼ tsp, Turmeric a pinch, Curry leaves few
Preparation of kerala Beans stir Fry Recipe (Achinga mezhukkupuratti recipe)
1. Cut the beans to two to three pieces
2. Heat oil in a pan and add mustard, jeera and urad dhall and sauté till golden brown
3. To this add the chopped onion and fry till they turn golden brown
4. Add the cut pieces and the curry leaves and make a paste of pepper, garlic along with turmeric powder and add to the beans pieces
5. Add required salt and sprinkle little water and allow it to cook on a medium flame
6. When it is three fourth cooked add the chilli powder and cook on a medium flame till the water drains out
completely and the pieces are cooked and then remove from fire and serve
