Ingredients for Kerala Style Karimeen ( pomfret ) Fish fry Masala Wrapped steamed in Banana Leaf recipe ( Fish in Banana Leaves )
Karimeen or pearl spot 7-8, Shallots 20, Onion 2, Ginger 4-5 inch piece, Garlic 20 cloves, Chilli powder 2 tsp, Pepper powder 4 tsp, Vinegar 4 tsp, Curry leaves 3-4 strands, Salt to taste, Coconut oil for frying, Tender banana leaves for wrapping the fish
Preparation of Kerala Style Karimeen ( pomfret ) Fish fry Masala Wrapped steamed in Banana Leaf recipe ( Fish in Banana Leaves )
1. Clean the fish and slit them on their sides
2. Make a paste with all the above mentioned ingredients
3. Apply the paste to the pieces completely and allow it to marinate for 20-30 mins
4. Place the marinated fish pieces on the banana leaf and wrap it gently and insert a tooth pick to it such that it
cannot be opened or a clove
5. Heat oil in a pan and deep fry the wrapped fish on a low fire with the lid closed on all sides till the fish is
cooked well. This process of fish fry takes a little time of about 15-20 mins per piece and then serve it hot by peeling the banana leaf garnished with onion rings, tomatoes, cucumber, carrot or lime as to taste
