Fish Fried rice is a delicious varieties in india, it is prepared with steamed rice and stir or fried in a pan with Fish, this is normally done with leftover rice.

Ingredients Salted fish fried rice recipe

White fish ½ kg
Basmati rice 2 cup
Onions large 2
Grated coconut 2 tsp
Coriander powder 1 tsp
Turmeric powder ¼ tsp
Jeera powder 2 tsp
Sombu ½ tsp
Bay leaf 1-2
Lemon juice ½
Oil ½ cup
Salt to taste

Preparation Salted fish fried rice recipe

1. Wash the rice and soak in water for 1 hour
2. Clean and cut the fish to 2 inch pieces
3. Mix the coriander, jeera, turmeric, fenugreek and ginger together
4. Heat 2 tsp of oil in a pan and fry the mixture in it for about a min and then place the fish in the pan and stir without breaking the pieces
5. Cover the pan and allow the fish to cook in its own steam for 5 mins
6. Remove the fish carefully with a fish slice and keep them warm
7. Heat the remaining oil and fry the onions and bay leaf and sombu till brown
8. Drain the rice and add to the onions, add the coconut and lemon juice and in the rice and fry for a couple of mins
9. Pour a cup of water into the pan in which fish was fried and boil it, pour this water to the rice mixture
10. Add extra required warm water for the rice to cook and when it is cooked turn the contents to a serving plate and garnish with chopped coriander and serve
