Egg noodles is a special nutritious breakfast non veg egg recipe that I have seen across India.This is healthy in the terms that this has little of exdtra fats and oils and it is very easy to prepare and nutritious. This has only a little added spices .Egg noodles extremely easy to prepare and the dish can be cooked in less than 20 min.
Ingredients for Homemade egg noodle recipe
Plain noodles 1 packet
Egg 1-2
Onion 1
Tomato juice 2 tsp
Ginger garlic paste 1 tsp
Pepper powder 1 tsp
Chilli powder 1 tsp
Garam masala ½ tsp
Oil 1-2 tsp
Salt to taste
How to Prepare Homemade egg noodle recipe
1. Slice the onion to pieces
2. In a big thick bottomed vessel boil almost half a litre of water and boil it by adding a tsp of oil and little salt
3. When it starts boiling add the noodles and cook for 4-5 mins
4. Drain the excess water and run through cold water for one or two times
5. Heat oil in a frying pan add onions and saute till golden brown. Add the ginger garlic paste, pepper powder, chilli powder garam masala and fry for a minute
6. Add the egg and scramble it till all the ingredients blend well with it
7. Add the tomato juice and cook for a min. Add required salt and the noodles and mix well and cook on a medium flame for 1-2 mins and serve hot. Garnish with chopped coriander and some fried onions
