Kanchi idli is un usually soft idli differentiated by its softness and taste. It gets the name kanchi idli as it orginated in kanchipuram.kanchipuram idli is usually served in temples.


Ingredients for Spiced Tamil Idli Recipe

1. Boiled rice 1 cup
2. Urad dal 1 cup
3. Jeera 1 tsp
4. Pepper 1 tsp
5. Sukku powder ½ tsp
6. Ghee 2 tsp
7. Oil 2 tsp
8. Curry leaves few
9. Green chilli 1-2
10. Salt to taste


How to Prepare Kanchi Idly

1. Soak the rice and dhall for 2-3 hours and then drain the excess water and grind it to a fine batter by adding salt and allow it to ferment for 8-10 hours
2. Take a tall vessel and grease it with little ghee and oil
3. If the batter is much thicker dilute it to the consistency of idli batter by adding little water and if salt is needed add it and mix well
4. Transfer the batter to the vessel and add all the rest of the ingredients one by one by mixing the batter well
5. Steam cook the vessel with a lid covered for about 15-25 mins or till a knife inserted in comes out cleanly
6. Take the idli and transfer to a tray and cut it to pieces of required shape and size and serve
