Andhra style brinjal curry recipe for biryani



Brinjal cluster beans (guar bean) curry is full of protein and fiber, brinjal cluster beans (guar bean) curry commonly used south indian reciepe for their lunch



Ingredients for Spicy Andhra style brinjal curry recipe

Small brinjals 4-6
Cluster beans 10-15
Gasagasa 1 tsp
Onion 1
Green chilli 4-6
Ginger garlic paste 1 tsp
Turmeric powder ¼ tsp
Milk ½ cup
Salt to taste
Mustard, jeera, urad dhall ½ tsp each
Asafoetida a pinch
Curry leaves few
Oil 1 tsp


Preparation of Spicy Andhra style brinjal curry recipe

1. Chop the cluster beans to 2 inch long pieces and the brinjal to medium sized cubes

2. Chop the onions and chillies and grind the onion to a coarse paste by adding little water

3. Soak gasagasa in little water for 1-2 hours and then grind to a fine paste. to this add the chilli, ginger garlic and also grind to a paste

4. Heat oil in a pan add the ingredients for thalimpu and saute till the dal turns red

5. Add the onion paste and fry till the raw smell goes off and then add the chilli paste and the chopped vegetable pieces and turmeric powder and fry for 1-2 min

6. Add the milk, gasagasa paste and required salt and close the lid and cook on a medium flame till the brinjals and the cluster beans are cooked and then serve garnished with curry leaves and serve
